The Michelin Guide released its latest ranking. Once again, Tokyo has come out as the city with the most Michelin-starred restaurants. Flaunting its 226 restaurants, you can dine on French, Italian, Chinese, Spanish, Korean, and Thai along with traditional Japanese dishes.
Besides diversity in flavor, Michelin CEO Paul Perriniaux announced that the 2020 guide includes 25 restaurants with female chefs. Moreover, three of them hold star status.
Michelin-Starred Tokyo Restaurants Fun Fact
When someone says “Michelin stars” and “Tokyo,” you probably instantly think of Jiro’s Sushi, right? I certainly do thanks to Netflix’s Jiro Dreams of Sushi.
If so, you will probably be disappointed that Sukiyabashi Jiro Honten, along with Sushi Saito, are not on the 2020 list. The two restaurants’ popularity has grown so much that they no longer accept general reservations from the public. As the Michelin Guide upholds an “anyone can go eat” policy, they bid them adieu and removed them from the 2020 list.
Eye-catching Restaurants
The 2020 selection added 20 newly Michelin-starred restaurants to the one-starred category, 3 to the two-starred, and only 1 to the three-starred, meaning Tokyo has 167 one-star restaurants, 48 two-stars, and 11 three-stars.
Within these highly exquisite restaurants are some unique ones to check out:
-> Inua (2 stars)
- Meaning “the spirit that exists in all living things” in Inuit mythology
- Scandinavian-influenced
- Managed by the former head of R&D at Noma, Thomas Frebel
-> Ginza Shinohara (upgraded to 2 stars)
- Serves kaiseki, a traditional Japanese course
- Moved from Shiga prefecture in western Japan in 2016
- Serves hassun, a seasonal platter, put together to reflect the current season in a rural area
-> Kadowaki (upgraded to 3 stars)
- Awarded two stars for 11 years and upgraded to three stars in its 12th year
- Serves kaiseki, a traditional Japanese course
- Uses his creative touch to blend in traditional and new ingredients
